Recipe of the Month: Spinach Feta Casserole

Spinach Feta Casserole

Serves 6-8

4lb fresh spinach or 2lb frozen chopped spinach that has been pressed and drained

3T Olive Oil1 egg

½lb feta cheese

½lb cottage cheese

¼c onion, chopped

2t basil

2t oregano

2t dill

½t black pepper

4-6c buttered bread crumbs

Sauté the onions and the herbs in the olive oil for a couple minutes. Combine the eggs, feta cheese, and cottage cheese and then add the spinach and sautéed onions. Press the mixture into an oiled 9”x13” pan. Top with breadcrumbs. Bake at 350 degrees (F) for 30 minutes or until lightly browned.Enjoy!
