Recipe of the Month: Meatloaf

It’s comfort food season, and this is definitely a staple of that oeuvre. This recipe serves 6-8 people.

2lbs ground beef
4 cloves garlic minced
1½ onions diced
1t Thyme
½t black pepper
½t salt
2 eggs beaten
1T Worcestershire sauce
½t Tabasco sauce
½c milk
1¼c oats
¼c fresh parsley chopped
Bacon (topping)

Sauce:

½c ketchup
¼c maple syrup
4t cider vinegar

Soak the oats in the milk. Add all the other ingredients, mix well and put meatloaf into an oiled 9”x13” pan. Lay strips of bacon flat and slightly overlapped on top of the meatloaf. Mix together sauce ingredients and pour to cover meatloaf. Bake at 350° for 1 hour and 20 minutes or until middle is approximately 160°. Heat any remaining sauce to serve with the meatloaf.
