Blueberry Muffins

This is an especially hard recipe to type up – the kitchen is closed for a well-deserved rest. But it’s really hard for those of us who are reduced to fending for ourselves! This recipe sounds perfect for rainy April days:  comforting, but still wholesome enough to feel healthy – warm weather, shorts, and summer time training goals are right around the corner!

1 ½c flour
½c sugar
2t baking powder
¼t salt
1 egg
½c milk
¼c butter
2c blueberries
Pinch of nutmeg

Mix the dry ingredients together. In a separate bowl, beat the egg, milk, and butter together. Fold them into the flour mixture, stirring only until combined – do not over mix! Fold in the blueberries. Fill your lightly greased muffin tin two-thirds full. Bake for 20 minutes at 400F, or until a toothpick inserted in center of a muffin comes out clean.
