Recipe of the Month: Berry Oatmeal Bake

One of my favorite recipes is a mixed berry oatmeal bake. It has been my breakfast almost every day for months! It's super simple, doesn't require a ton of time or ingredients, and makes enough leftovers to get you through the week. Not only that but it’s easy to take on-the-go. Once it's done, just slice it, wrap it up, and eat it during your commute or at the trailhead. It's good hot or cold, travels well, and is a delicious post run breakfast or snack item.

Ingredients:

In a bowl, mix together the following ingredients:

2 ¾ c rolled oats
1 t baking powder
¼ t salt
¼ c maple syrup
½ c plain Greek yogurt
2 eggs
1 ¼ c almond milk
¼ c melted coconut oil
2 t vanilla extract
1 c fresh or frozen berries of your choice.
(I add extra berries and mini chocolate chips to make it a little more fun)

Instructions:

Bake in a greased 9x13 pan for 40-45 minutes at 350° F until the edges are brown and the center has set. Once cooled, cut up in squares for an easy to take on-the-go breakfast.
