Recipe of the Month: Maple Nut Granola

Summer days are not a time to fuss with large or complicated breakfasts, but you have to stay fueled for your day. That's why this recipe is a perfect addition to your repertoire:   get up, enjoy a quick bowl of the granola and get out the door to the days' work, play or whatever else may come your way. This recipe makes 10 cups.

½c Maple syrup

¾c Natural peanut butter

2T Molasses

6c Rolled oats

½c Raw wheat germ

½c Sesame seeds

½c Shredded coconut

½c Sliced almonds

½c Cashews

½c Sunflower seeds

½c Raisins

Combine the syrup, peanut butter, and molasses and mix until smooth. In a large baking pan mix the dry ingredients. Pour the liquid mixture over the oat mixture, and stir until all the oats are moistened. Bake for about 45 minutes at 350F. Stir occasionally to prevent burning. Granola should be light and dryish when done. Toss raisins into the granola while it is still warm, and enjoy with milk, yogurt or as a tasty, healthy addition to other meals.
