Recipe of the Month: Yummus Hummus

Hummus is a tasty addition to many dishes or can be enjoyed on its own. Salad dressing and sandwiches can be enhanced with a spoonful of this nutritious condiment. Store bought is always a safe option, but making your own hummus is simple and you probably already have the ingredients. This recipe is a great way to work on your chef skills, by playing with the seasonings and presentation. Bon appétit!

Ingredients:

1 can garbanzo beans (not drained)
3-4 cloves of garlic
2 T tahini
Juice of half a lemon
1 t salt
Optional: olive oil

Instructions:

In a food processor, blend all ingredients. Adjust the liquid if necessary by adding water or olive oil to create desired texture. It should be creamy but not runny. Serve in a bowl topped with a drizzle of olive oil and enjoy with fresh cut veggies.

Store leftovers in an airtight container in the fridge. 

Other ingredients can be added for more flavor. Try blending in one or two of the following - sun dried tomatoes, pine nuts, pesto, roasted red peppers, parsley or smoked paprika.
