Recipe of the Month: Sour Cream Coffeecake

Given the dark winter mornings, it can sometimes be hard to get out of bed and get going. Here’s an eye-opener that will get you going! Recipe serves 6-8.

Topping:

1½c chopped walnuts

¾c brown sugar

2t cinnamon

Batter:

3c unbleached white flour

1T baking powder

1t baking soda

1t  salt

¾c butter softened

1½c brown sugar

3 eggs

1½c sour cream

2t vanilla

Combine flour, baking powder, baking soda, and salt in a large bowl. Cream the butter in another bowl, beat in sugar, then eggs. Blend in sour cream and vanilla alternately with dry ingredients until smooth. Pour half the batter into a greased 10 inch pan. Pour half the topping evenly over this and swish in in with a fork. Pour rest of batter into the pan and sprinkle over the rest of the topping mixture. Bake in preheated 350° oven for 40-50 minutes or until toothpick inserted in center comes out clean.
