Recipe of the Month: Southwestern Salad

Here’s a simple and delicious mix that can be used for whatever you need. A fun nutritious snack? A dinner to go with any number of carb options? Want any sort of additions? Have at it! This recipe can also be scaled up very easily.
Ingredients:
Can of black beans (15 oz)
Can of pinto beans (15 oz)
Can of fire roasted tomatoes with green chiles (15 oz)
½ c corn
1 t salt
1 t pepper
1 t chili powder
Optional- 1 T fresh cilantro
Instructions:
Mix and adjust spices to taste. Enjoy any number of ways. With chips, on a tortilla, next to rice, or as is!
