Recipe of the Month: Lemon Poppy Seed Energy Bites

There are plenty of chocolate, peanut butter, sweet flavored energy bite recipes out there. But this recipe includes a little more unique tart flavor and feels a bit lighter on the stomach. It is quick to whip up and a great tasty snack to keep you going. As many no bake recipes allow, substitutions can be made, additions can be included, but the basic provided recipe is delicious as is. After chilling them in the fridge they are a great respite on the ever increasing warm days.

Ingredients:

1 ½ C Oats
½ C cashews
2 T cashew butter (easy to DIY)
¼ C maple syrup
juice + zest of 1 Lemon (~3 T)
1 t vanilla extract
2 t poppy seeds
pinch of salt

Instructions:

Use a blender or food processor to grind the oats into a fine flour. Add the cashews and use the pulse setting until they are finely ground.

Toss in everything else except for the poppy seeds and process into a thick uniform dough. Add in the poppy seeds and pulse until everything is well combined or if you like getting hands-on, move everything to a bowl and work the poppy seeds in with some elbow grease.

Make the energy balls using a 2 T scoop, or just estimate, and roll the balls in your hands to smooth them out. That’s it, they’re ready to go - the power of the no bake! Enjoy from the fridge for 10 days or put in the freezer for a month. Enjoy this unique take on a more savory energy bite.
